Many of the students at Inspiration Kitchens come to us with a vision of improving their cooking skills, getting a job, and one day opening their own restaurant. Recent grad Kirk entered the food service training program looking for a new start after experiencing a difficult time in his life. 

He's now working as a baker, caterer, and pursuing entrepreneurship training to learn the skills needed to build his family's business.

Kirk's father, Tim, first opened a health food store on the south side of Chicago in 1976, "wanting people to eat in a tasty, healthy way," Kirk recalls. Brother Tim's is currently run by Kirk's sister, Kimberly, but Kirk works as the baker and other family members pitch in too. Brother Tim's is known for their tacos, vegetarian fish nuggets, veggie burgers, peach and blueberry cobblers, and BBQ steaklets. 

They do a lot by hand, including mixing the dough for their house-made bread. "We take the machinery out and put the love in!" says Kirk.

As good as I remember it. I last went to Brother TIms when he was on Cottage Grove and 72nd, his food is still solid, filling and tasty. Love that Honey Lemonade!
